Product Sheet – Comorian Pilau Masala (2 kg of rice – Serves 15)
Description
This authentic spice mix is artisanally prepared in the Comoros Islands by a 60-year-old mother, a specialist in traditional festive cooking. Influenced by African, Indian, and Malagasy cuisines, the pilau dish varies across islands. This masala enhances the Comorian version with rich and aromatic flavors.
Ingredients
Curry, cumin, turmeric, clove, cinnamon, cardamom, vanilla, garlic, saffron.
To complete: salt (to taste), basmati rice, meat (beef, chicken, or fish), onions, fresh tomatoes + tomato paste.
Recommended preparation for 2 kg rice (or half for 1 kg)
Prep time: 10 minutes
Cook time: 45 minutes
Instructions:

Cut 700g of meat. Mix half the spices with the meat and marinate for 15 min.

Brown the meat in oil, then set aside.

Slice 2 onions and chop 4 peeled tomatoes. Sauté with remaining spices and 3 tbsp tomato paste.

Cover and cook for 10 min.

Add 2 kg basmati rice, mix, and return meat to the pot.

Add 175 cl hot water. Simmer for 30 min until water is absorbed.
